Food Category November 2020 Finalist, taken in Kuala Selangor, Malaysia, by Mohd Samsi Sumairi, titled Exotic Food (Cow Skin).

As told by Samsi – “Cow meat skin exotic food photo taken in Kuala Selangor, Malaysia. In my country, Malaysia cow skin is one of our special cuisines that served in various ways. We called it as ‘belulang’. You can serve it in many ways, but to make the cow skin edible you have to take a long tiring process and not everyone can do it. First, you have to clean the cow’s hair by burning it in the small fire until the hair is gone, then you can clean the burning part by currying it with a knife. Second, you have to boil the cow skin in the boiling water for 2–3 hours until it is soft enough and chewable. Third, lift it from the pan and cut it into smaller pieces. Then you can cook it as you want. Usually, it is made into a spicy curry or you can saute it with chilli pepper. Cow skin is delicious and the texture is so unique.”
